Broccolini and chilli sauce

Flavours sometimes combine in unexpected ways that transcend the sum of their parts. Here, chilli sauce, normally a condiment, takes on a new character of sweetness and intensity. Likewise, broccolini (not baby broccoli; a hybrid of broccoli and gai lan, Chinese kale) unleashes both delicacy and earthiness as it roasts. Together, a wonderful combination.


Broccolini and chilli sauce

Set your oven to 220°C. On a baking sheet, toss together 200g broccolini, 1 tablespoon Sriracha chilli sauce and 1 tablespoon olive oil. Roast for 15–20 minutes, until the delicate tips of the broccolini just begin to char.
