Spicy cherry tomato relish

🍅 Spicy cherry tomato relish 🍅⁣⁣⁣⁣ ⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣I’m rarely without a jar of this delicious and versatile alternative to tomato sauce or ketchup, and it’s very easy to make.⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣Place 60ml (¼ cup) apple cider vinegar, 75g (⅓ cup) raw sugar and 1 teaspoon sea salt flakes in a heavy-based pan over low heat, stirring until the sugar dissolves. Add ½ teaspoon dried red chilli flakes and 2 teaspoons finely grated ginger.⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣Halve 500g (1 lb) cherry tomatoes and roughly chop 1 red onion. Add to the pan and turn up the heat to produce an insistent bubble.⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣Cook, uncovered, for about an hour, stirring occasionally, until thickened.
