Cheesecake petit fours

I made a batch of these for a friend's party on the weekend: they're tiny little no-bake cheesecakes based on my personal cheesecakes for two recipe. The quantities in that recipe made 24 petit fours.

I made up the base mixture and put a teaspoon of it into each little patty case, then piped in the filling. I popped a single raspberry into the filling before putting them into the fridge to set.

I purposefully positioned the raspberries with the hull-side (that's the hole) pointing up because just before they were served I put two drops of balsamic vinegar into them. They're meant to be eaten whole – they're tiny – and the extreme sweetness of the cheesecake, the tart-sweet raspberry and the vinegar explode in your mouth. Good times!
